Week 6: Whole Wheat Oatmeal Sandwich Bread

We decided in 2024, we are going to share a new bread recipe every single week. While we currently are not on the sourdough train yet (I can't take on one more thing to feed), there are still plenty of ways to make healthier bread than what you get in the grocery store!

Whole Wheat Oatmeal Sandwich Bread

Ingredients
• 1 1/2 cups bread flour
• 3/4 cup whole wheat flour
• 1 1/2 tsp dry yeast
• 1 tsp salt
• 3/4 old fashioned rolled oats
• 2/3 cup boiling water, plus 1/2 cup room temp
• 2 tbsp unsalted butter
• 1/4 cup molasses

Instructions
1. Whisk flours, yeast, and salt together in a stand mixer bowl. In a separate bowl combine oats, boiling water, and butter. Let sit for 15 minutes. Add room temp water and molasses, stir to combine.

2. Using dough hook, slowly add oat mixture to flour mixture. Mix on low until dough is combined then increase to medium speed for 8 minutes, until dough comes away from the bowl.

3. On a light floured surface, form the dough into a smooth ball. Place ball in lightly greased, covered bowl. Let sit 1 - 1 1/2 hours until dough has doubled in size.

4. Grease 8 1/2 by 4 1/2 inch loaf pan. Sprinkle oats inside before sprinkling flour to keep from sticking.

5. Deflate dough. Stretch into 8 by 6 inch rectangle. Roll dough into a tight cylinder and tuck the sides under the dough when placed in the pan. Cover the pan and let sit for 1 hour, dough should be 1/2 inch above the lip of the pan.

6. Heat oven to 350F. Mist loaf and sprinkle with oats. Bake 35 to 40 minutes until deep golden brown. Let cool in pan for 15 minutes. Transfer to cooling rack for 3 hours before serving.
